James Carpenter

At c/o The Maidstone we offer an entirely new concept of hospitality to the East End, and so naturally we also take a creative approach to cuisine. As executive chef of our restaurant, The Living Room, James Carpenter is the man whose vision and culinary panache ensure that every dish is a cause for excitement.
James comes to The Living Room with experience at some of the Hamptons’ best-known eateries, including Della Femina and The American Hotel. His stint at New York City’s Aquavit provided insight into c/o Hotels’ Scandinavian palate, and his flair for Southern touches is a result of time spent with chefs Susan Spicer at New Orleans’ Bayona, Louis Osteen at Charleston’s Louis’s, and Gunther Seeger at Atlanta’s Ritz-Carlton Buckhead.
James is a devoted student of the slow food movement, and was one of the Hamptons’ first chefs to prioritize the use of local, organic produce, meat and seafood in his kitchen. He passionately believes that by utilizing the freshest ingredients “to cook with the seasons,” he creates the highest quality cuisine while also preserving the rural beauty of the East End of Long Island.
